Co Ferm began during the 2022 harvest with a simple decision in the cellar. Small lots of Merlot and Cabernet Franc from Yountville were harvested on September 2, followed by Cabernet Sauvignon from Oakville on September 3. Rather than fermenting three small lots separately and blending the finished wines later, we destemmed the fruit into the same tank and allowed all three varieties to ferment together.

What began as a practical winemaking decision produced something distinctive. By fermenting together from the beginning, the three varieties developed as a single wine — integrating their fruit, aromatics, tannins, and structure throughout fermentation rather than after the fact. The result was compelling enough that co-fermentation has become an increasingly important part of our winemaking. The 2022 vintage is where Co Ferm began.

The wine was aged for three full years in barrel — 10% new French oak and 90% neutral oak — followed by an additional year in bottle before release. Four years from harvest to release allowed the individual characteristics of the three varieties to come together while preserving the personality each brings to the wine.

Tasting Notes

• Color: Deep garnet with rich saturation and brilliant clarity.

• Aromas: An expressive, layered bouquet of ripe plum, blackberry, dark cherry, and red currant, accented by violets, warm spice, and subtle savory notes.

• Palate: Rich and beautifully integrated, combining the dark-fruit depth and structure of Cabernet Sauvignon with the plush texture of Merlot and the aromatic lift and elegance of Cabernet Franc. Layers of blackberry, plum, cherry, black tea, cocoa, and subtle spice unfold across the palate while remaining fresh and focused.

• Acidity: Bright and balanced, providing freshness, energy, and definition through the richness of the fruit.

• Tannins: Fine-grained, polished, and supple, with enough structure to provide backbone while remaining silky and approachable.

• Finish: Long, seamless, and persistent, with lingering dark fruit, red fruit, warm spice, and a refined, harmonious close.

Three varieties. One fermentation. Co Ferm.
