Another stellar year for the Fazio Riesling vineyard. Being near the coast and protected on the south facing coastline, this gorgeous vineyard is not exposed to high temperatures, but receives many hours of sunlight and cool breezes which helps maintain the natural acidity in the juice while providing rich fruit flavors. A 3 month fermentation at a very cold 40 degrees has proven to be a great program for this incredible juice. Fermentation temperatures this cold allow the Riesling aromas to become extremely intense and the mouth feel round and wonderful, which is normally seen in barrel fermented wines. As always, once the sugar content gets below 4 brix we taste every hour until acid, alcohol and sugar have achieved balance and we stop fermentation. Another incredible mouth-watering Waugh Riesling for you to enjoy all summer long. The explosion of sweet fruit is followed by a rich full mouth feel as the natural acidity takes over into a nice smooth long finish. This could be the ultimate breakfast wine as well as cocktail or dinner with any seafood or spicy dish.
